Hello Everyone!! How is everyone’s Thursday? I am planning tomorrow’s new Friday meal which I am very excited about. Can not wait to post that. 🙂
I came up with a great recipe that I think everyone will enjoy.
Mediterranean Tart Recipe-
2 tomatoes – thinly sliced
1/2 cup of grape tomatoes/ sliced in half
3/4 tsp of sea salt
1 box of puff pastry sheets- thawed
6 cups of shredded mozzarella cheese
4 oz of feta crumbled cheese
2 garlic cloves- minced
1 bunch of basil- minced
1 bunch of mint- minced
1/4 cup of chives- chopped
1 tbsp of extra virgin olive oil
Preheat the oven to 400 degrees or 200 Celsius. On a plate, place the tomatoes and add the salt and pepper. Set aside.
Roll 1 pastry sheet into a 14 inch square on a lightly floured surface. Place on an ungreased baking sheet. Next, cut 4 strips from remaining pastry sheet, and use that dough to form a border around the edge of the squares.
Place in oven and bake for about 14 minutes or until browned. Remove pastry, and add the tomatoes, cheeses, and herbs. Top with a drizzle of olive oil. Place in oven again, and bake for about 15 minutes or until cheese has melted.
