I would like to introduce a baker and stay at home mother from a small town in Michigan. Say hello to Stacy from Akron, Michigan. Thank you Stacy for submitting your delicious recipe.
Stuffed Greek Mushrooms-
24 large white button mushrooms- cleaned and tops off
1 cup tomato – chopped
1/2 cup of kalamata olives- pitted and chopped
3 tablespoons of feta cheese- crumbled
2 garlic cloves- finely chopped
3 tsp of fresh basil- chopped
sea salt/ pepper
1. Place mushrooms smooth side on top of a baking sheet. Cook in a oven at 425 degrees or 200 Celsius for about 7 minutes. Remove from the oven and let the mushrooms cool down a bit.
2. Flip the mushrooms hallow side up and set aside. In a bowl, mix the tomatoes, feta, garlic, basil, olives, and seasonings. With a spoon, spoon the mix into each mushroom.
3. Place mushrooms back into the oven for about 10 minutes or until golden brown on top.
