Sunday night dinner

I hope you all had a great Sunday!! Here’s a idea for your dinner plans.

Fasolia Salata- Bean Salad Recipe-



1 pound of lime beans
1 pound of canned beans
1 pound of fresh green beans
1 large onion – chopped
1 bunch of fresh dill- chopped
1 bunch of parsley- chopped
1/2 cup of extra virgin olive oil
3 lemons juiced
1 teaspoon of dijon mustard
Sea salt & ground pepper
1 red bell pepper- chopped

In a large bowl, add giant beans and cover in lukewarm water and soak for about 10 hours or over night.

When beans are ready, transfer to a pot and boil for about 5 minutes. Drain the beans and return to the pot and cover with cold water and bring to a boil. Reduce heat to simmer, and cook for about 2 minutes. Add salt & pepper to taste.

Boil the green beans for 35 – 40 minutes and drain.
Combine all beans in a salad bowl.
In a small bowl, whisk together olive oil and lemon juice, salt, pepper, and mustard. Pour over the salad and mix to combine.

Garnish with chopped parsley, red pepper, dill, and seasonings.
