How about some healthy food tonight?!!
My family loves baked or fried squash. We call it, κολοκυθάκια τηγανητά!!
Here is this super easy recipe for fried squash.
κολοκυθάκια τηγανητά Recipe-
- 5 medium squash or zucchini
- 1 can cold soda water
- 1 cup flour
- 1 cup olive oil for frying
- 1 Tbsp sea salt
- 1 tbsp of ground pepper
- fresh lemon juice
- 1/4 cup of parmesan cheese
Wash the squash or zucchini and cut into slices, thin slices. Place the slices onto a plate, and season with a bit of salt. Set aside. In a medium size bowl, prepare the batter. Mix the flour, salt, soda water and whisk to combine. Dip each slice into the batter. and prepare a saucepan with olive oil. Place on medium heat and fry the slices in batches. I usually place about 4 slices in a pan at a time. Place slices on a plate with a paper towel to drain the olive oil. Serve with fresh lemon juice and cheese.
