Vegetarian Hummus Wrap Recipe

Ingredients:
- 2 large tortillas (plain)
- 1/2 cup of creamy hummus dip (recipe on the blog )
- 1 cup of shredded lettuce, cabbage, or spinach
- 2 tomatoes, sliced thin
- 1/4 red onion, sliced thin
- 2 slices of any cheese you love! We went with a mild cheddar
- 1 large pepper, sliced thin
- 1 large carrot, grated or sliced
- Freshly chopped dill or parsley
- Olive oil & lemon juice
- Salt & pepper to season
- Diced Kalamata olives are really good in this too!
Method:
- Place a large tortilla on the plate. Add the hummus and spread it out evenly but make sure you leave the outside border clean. I like to use about 2-3 tablespoons of hummus dip per tortilla.
- Then add your toppings of choice. Once you add the toppings drizzle with a little bit of olive oil and lemon juice. Season with salt and pepper. Add the chopped parsley or dill.
- Begin to tightly roll the tortilla from the bottom up making sure to tuck in the sides first. The hummus will help seal the tortilla.
