Festive Spinach Arugula Salad Recipe
Servings: 4
Salad Ingredients:
- 2 cups fresh spinach
- 2 cups fresh arugula (rocket)
- 1/2 cup crumbled feta cheese
- 1/4 red onion, thinly sliced
- 1 apple (such as Gala or Fuji), thinly sliced
- 1/4 cup of candied walnuts
- Optional: You can serve with toasted walnuts, almonds, or pumpkin seeds
Balsamic Olive Oil Vinaigrette Ingredients:
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons honey or maple syrup
- Salt & pepper to taste
- Optional: I added 1 tablespoon of my pomegranate liquor to this and it was amazing!
Method:
- In a large bowl, combine the spinach and arugula. Top with crumbled feta, thinly sliced red onion, apple slices, and candied walnuts.
- Whisk the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper in a small bowl. Taste and adjust seasoning as needed. I like my dressing extra balsamic-y so, I always add more.
- Drizzle the vinaigrette over the salad just before serving. Toss gently to combine and ensure everything is well-coated.
- Serve immediately as a refreshing side dish or a light main course.
