Spring starts March 20th!! Yay it is almost here.
The Vernal Equinox
Ah, spring! This season brings increasing daylight, warming temperatures, and the rebirth of flora and fauna.
The word equinox is derived from the Latin words meaning “equal night.” Days and nights are approximately equal everywhere and the Sun rises and sets due east and west.
My question to you is, what will you be cooking tomorrow? Need any ideas… Feel free to read below for a great salad recipe.
Spinach, Avocado and Mango Salad:
2 tablespoons brown sugar
1/4 cup water
1/3 cup lime juice
1/2 cup chili garlic sauce
1 teaspoon of fresh lemon juice
2 medium mangos – peeled, seeded and diced
2 avocados – peeled, pitted and diced
1 (10 ounce) package of already pre washed spinach
1/2 cup of feta crumbled cheese
1/4 cup of dried or candied walnuts
Directions:
1. In a saucepan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside.
2.In a large bowl, toss together the mangos and avocados. Arrange the spinach salad on serving plates, then top with a few spoonfuls of the mangoes and avocados. Pour dressing over the top. Add crumbled feta and the walnuts to the top. Add some of the lemon juice to the top and Enjoy. Kali Orexi!
