Good Monday to you all. Sorry I was delayed in posting recipes, but I am planning a few catering events.

Sole with Strawberries and Almonds-
Ingredients:
1 1/3 cups of couscous
1/4 cup of olive oil extra virgin
1/4 cup sliced almonds, toasted
2 tbsp chopped parsley, plus more for garnish
1 1/4 tsp of sea salt
1/2 tsp of black pepper
1 lb strawberries, diced
1 bunch of mint chopped
2 tbsp white balsamic vinegar
1 tbsp unsalted butter
1 1/4 lbs sole fillets
lemon juice- optional
Directions-
In a medium pot, bring 1 1/3 cups of water and couscous to a boil. Then reduce the heat to low and simmer per package directions, and cover. Stir in the 2 tbsp of the olive oil, and 3 tbsp of the almonds, parsley, and sea salt & pepper.
Add the strawberries and vinegar to a pan over medium heat. (Cook for about 7 minutes.) Stir in the butter, 1/8 tsp of salt and 1/8 tsp of ground pepper.
Place fillets on a plate and pat them dry with a paper towel. In a large skillet, saute 1 tablespoon of olive oil over medium heat. When the olive oil is heated, add in the fillets. Saute for about 3 minutes and then flip and cook each side. Repeat until all fillets are done.
Serve the fish over the couscous. Spoon strawberry sauce on top. Garnish with fresh parsley, mint and fresh lemon.
