Yes it’s quinoa time again!! 🙂 I have been playing around with herbs and ingredients to add to quinoa. I really love cooking with quinoa, it’s very versatile. Check out this flavorful recipe below.
Quinoa Pesto Salad Recipe-
4 cups of quinoa
1/2 teaspoon of sea salt
3 tablespoons of extra virgin olive oil
3 tablespoons of fresh lemon juice
1 1/2 cups of chopped pine nuts- lightly toasted
1 red onion, sliced finely
1 cup of fresh basil, chopped
1 cucumber sliced
optional- crumbled feta cheese
Place the quinoa under cold water and rinse it thoroughly.
Put the quinoa in a saucepan with 4 cups of water, and place on medium high and bring to a boil. Add salt to the saucepan and once it boils, reduce the heat and let simmer. Cook for about 18 to 20 minutes.
Drain the water from the quinoa and place quinoa in a medium size bowl. Add in the lemon juice and olive oil. Let the mixture sit to cool at room temperature.
Place the pine nuts, red onion, basil, cucumber, and cheese in the bowl, and mix to combine. Season with salt & pepper and serve.
* This is really good when you let the flavors chill in the refrigerator for about an hour.
