Lahanosalata (Greek Coleslaw) Recipe
We’re back with another yummy Easter salad recipe! Today, I’m sharing a traditional Greek salad that you’ll often find at tavernas in Greece. Lahanosalata is the BEST and healthiest salad. This salad is gluten-free, dairy-free, Lent-friendly, and simply amazing! You only need a few ingredients to make it, highlighting the carrot and cabbage. Don’t forget about the amazing olive-lemon dressing!
Jazz up your lahanosalata with extra ingredients such as currants, sesame seeds, or even slivered almonds. I also like adding fresh dill to the mix! Cabbage is typically in season from fall to winter, but we were able to find some at the store last night. I hope you enjoy this light, tasty salad!
Lahanosalata Recipe
Servings: 4
Ingredients:
- 1 medium green cabbage, remove outer leaves and wash
- 2 large carrots, peeled
- 2 lemons, reserve juice (see notes)
- 2 tablespoons of white vinegar (see notes)
- 1 tablespoon of honey (optional)
- 1/4 cup Greek olive oil
- Salt & Pepper
- A pinch of freshly chopped dill
- A pinch of freshly chopped parsley
- Optional: Kalamata olives
Method:
- Cut the cabbage in half and then again into quarters. Finely chop your cabbage and carrots. We like to use a large cheese grater for the carrots. Make sure you use the largest setting. As for the cabbage a mandolin usually does the trick but you can use a sharp knife or food processor with the grater attached.
- At this point, you can cover the salad without any dressing and leave it until ready to use. If you are serving the salad today then proceed to step 3. See notes.
- In another bowl add the lemon juice, vinegar, olive oil, honey, and seasonings. Whisk until combined and pour the dressing over the salad. Add the fresh herbs and then toss the salad.
- Chill the salad in the fridge for about 30 minutes or until the flavors come together. Serve with currants over the top. (I served mine with sesame seeds.)
Notes:
- I love making the cabbage and carrot mixture ahead of time, without the dressing. This helps me organize my Easter menu. If you do this, make sure to add a tablespoon of lemon juice over the cabbage and carrot mixture. This will help keep the slaw fresh.
- Adding vinegar + lemon gives it that acidity kick which we love! But you can add either or both.
- Making the dressing ahead is a great idea too!
- Adding honey is a good balance to this salad recipe! It adds the perfect sweetness.
