Ariba Tzatziki Dip

Today, we’re having some fun in the kitchen by combining two of my favorite cuisines: Greek and Mexican! To celebrate Cinco De Mayo we are enjoying our favorite dip; Ariba Tzatziki dip!
Mexican cuisine ranks high on my list, right alongside Greek food, so bringing them together for this occasion feels extra special. If you’re anything like me and tend to leave things to the last minute, don’t worry—this quick and flavorful fusion dip is just what you need.
Let’s get cooking! I hope you love this recipe as much as I do!

- In a medium-sized bowl prepare the avocados. Halve the avocados with a knife then remove the pit. Add the avocado to the bowl. Squeeze the lime juice over the avocados and add grated garlic and a pinch of salt.
- Mash with a fork or masher, and set aside. (You want the consistency of guacamole)
- Halve the cucumbers and remove the seeds. Grate the cucumber using a grater. Once you grated the cucumbers squeeze out the liquid. Add the cucumber to the guacamole mixture and stir to combine.
- Add the yogurt and fresh herbs. Mix to combine. Season with more salt and pepper. Taste to see if you need to adjust the seasoning. Serve with fresh cilantro & dill and a drizzle of olive oil.
