Pasta Satay Recipe
I keep exploring recipes with bok choy. Yes, I do love bok choy, and it is very beneficial for all of us. I love Peanut sauce, so this recipe is one of my favorites. 🙂
Pasta Satay Recipe-
1 bunch of bok choy- cleaned & chopped
1/3 cup of white onion- minced
2 garlic cloves- minced
1 yellow pepper- chopped
1/3 cup of white mushrooms
1 pack of fettuccine, or penne pasta
Tsp. of olive oil
Peanut Sauce-
3 tbsp. of peanut butter
2 tsp. of soy sauce
A few chili pepper flakes
1 tsp. of sugar
1 tsp. of honey
2 tsp. of fresh orange juice
3 tbs. of rice vinegar
Prepare-
Coat a grilled pan over medium heat. Place a few tsp. of olive oil in a pan.
Next, cook noodles or pasta in boiling salted water for about 3 – 4 minutes or until pasta is andante. Drain and rinse. Transfer to a bowl.
With the coated grilled pan, add onion and garlic. Sauté a few minutes, then add the rest of vegetables. Sauté for a few minutes or until the bok choy has become softened. While the vegetables are cooking, in a blender add all the ingredients of the peanut sauce and blend on medium high. Set the sauce aside. Drain the vegetables, and mix into the pasta. Then add the peanut sauce, and add some salt and pepper to taste. Let cool and serve with some fresh cilantro on top.
