White Rice Muffin Recipe
Yields 6
Prep Time- 5 minutes
Bake Time- 17-20 minutes
Ingredients:
- 1 egg
- 1/2 cup of milk or any fruit juice
- 1 tsp. of vanilla
- 1 tsp. of grated lemon or orange
- 2 tbsp. of sugar
- 2 tbsp. of canola oil or veg oil
- 1 cup of white rice flour
- 2 tsp. of baking powder
- 1/2 tsp. of salt
- 2 tbsp. of chopped walnuts or pecans
- 1/4 cup of dried blueberries or any dried fruit
- 2 tbsp. of honey for the top
Preheat oven to 425 degrees. Lightly grease the muffin pan. Set aside. In a mixing bowl, place all of the ingredients and mix well. Pour into prepared muffin tin, and bake for 17- 20 min. allow the muffins to cool and top it off with some honey. Enjoy!
