Kiklos olives come from a beautiful land that I like to call my father’s home land; the Peloponnese in Greece. Kiklos uses the Koroneiki varietal, also known as the “Queen of olives” in Greece.

When you dive into Kiklos for the first time, you will find that the distinctive bold flavors are very delectable to the pallet. The flavor components are peppery, fruity, and slightly bitter.

Featured Recipe: Healthy Minestrone Soup

Ingredients:

  • 4 tablespoons Kiklos Greek olive oil
  • 1/2 white onion, chopped
  • 2 garlic cloves minced
  • 2 cups pasta, cooked (set aside)
  • 4 cups vegetable broth
  • 1 can kidney beans, rinsed
  • 1 can tomato sauce, with tomatoes
  • 2.5 cups fresh spinach, washed
  • 2 cups chopped carrots
  • 1 tablespoon white wine
  • 2 Celery stalks, diced
  • 1 lemon, reserve juice
  • Pink Himalayan sea salt
  • Black pepper
  • 1 tablespoon Italian seasoning

Method:

  1. In a large pot over medium heat, saute the onions, and garlic with Kiklos olive oil. Saute until onions are translucent.
  2. Add the beans, tomato sauce, spinach, carrots, white wine, and celery. Add vegetable broth, and spices, and simmer for 10 minutes.
  3.  Add cooked pasta to pot, and let sit for 2 minutes, and serve.
  4. ~~I like to add lemon juice over the top for a little kick.
