Zucchini Mezes

Here is a easy recipe and for the vegetarian lovers. 🙂

Zucchini Mezes (Appetizers) Recipe-


1 container of Greek plain yogurt

3 tsp of lemon juice

2 tsp of lime juice

2 tsp of sea salt

ground pepper

1 1/2 pounds of shredded zucchini

2/3 cup of sliced scallions

1/3 cup of cilantro- chopped

1 garlic clove- minced

1 egg yolk beaten

1/3 cup of A.P flour

1/4 cup of extra virgin olive oil

In a medium bowl, mix the yogurt, lemon, lime, salt, pepper until smooth. In another bowl, add the zucchini, scallions, the herbs, egg, and flour, and mix. Heat the olive oil over medium heat in a large pan. Add in the zucchini mixture with a ice cream scooper, about 1/4 cup portions. Flatten the zucchini mix out a bit with a spatula. Cook for about 4 minutes or until brown. (Make sure to flip each side, and cook until brown.)

Serve each mezes with the lemon- lime yogurt. Top it off with chopped cilantro.
