Stuffed Vegetables
I wanted to make some stuffed vegetables for dinner tonight, and came up with this recipe below. Super easy, and I think these would go great at a party or outdoor event.
Stuffed Mushrooms & Mini Peppers In Minutes-
Ingredients:
10 mini bell peppers- sliced lengthwise and remove seeds
10 large white mushrooms- remove the tops
boursin cheese – 1 container
1/3 cup of red wine
sea salt & ground pepper to taste
Directions:
Prepare the vegetables and place inside a deep baking dish. Place oven temperature on 375 Degrees or 200 Celsius. Make sure to place a bit of olive oil on the bottom of the baking dish, to prevent the vegetables from sticking. Spoon in about a heaping teaspoon of boursin cheese inside the mushrooms and the peppers. Repeat until each one is filled. Place about 1/3 cup of wine on the bottom of the baking dish and season the vegetables with salt & pepper. Bake in the oven for about 25 minutes or until the vegetables are golden brown on top.
Top it off with some fresh diced chives.

* I did top my peppers off with a basil pesto sauce over the boursin cheese. It added a nice flavor. 🙂
