Yummy Blackberry muffins with a hint of lemon.
I couldn’t help myself and I insisted to keep my blog alive today and cook in this kitchen. Our air conditioning is back on! YAYYY! I never thought I would be happier to have the ac on. LOL Okay now for the yummy muffin recipe.
Blackberry Muffins with a touch of lemon Recipe-
(As you all know I have been posting a lot about blackberries. We have a whole blackberry busch outside. Love blackberries as well.)
Ingredients-
2 eggs
2 1/2 cups of blackberries, washed and drained- or any fruit you like
1 lemon, use the rind- 3 tsp
2 tsp of vanilla flavoring
2 cups of flour
1/2 cup of milk
2 tsp baking powder
1/4 tsp salt
1 cup of granulated sugar
1/2 cup of butter at room temperature

Directions:
1. Heat oven to 375 degrees or 200 c. Grease a muffin pan, enough for 12. In a bowl, mix the butter, and gradually add in the sugar and beat until fluffy. Add in the eggs one at a time, and beating after each egg. Then beat in the vanilla and the lemon rind. Add the baking powder and salt. With a wooden spoon, fold in half the flour and the milk. (Repeat) Fold in the blackberries. Use a spoon or a ice cream scooper, and place in muffin cups about 3/4 full. Bake at about 15 to 20 minutes or until they are golden brown on top.
